Victorian distillery Four Pillars is set to open its first Sydney location in Surry Hills on 12 June.
The gin wizards announced the launch back in September last year, and the official opening couldn’t have come at a better time.
The space, located in the Bussell Brothers Building on Crown Street, includes a gin shop, gin lab and a bar.
The store will sell everything from signature Four Pillars gins to limited edition bottles, books, bar apparatus, merchandise and food products.
Four Pillars co-founder Matt Jones and experience director Leah Mackenzie have headed up the lab, which features a copper still from the distillery’s Yarra Valley HQ, a full bar and room for regular masterclasses.
“When we thought about what we wanted to bring to Sydney, we were determined to take that same passion for making, creativity and experimentation and focus it on the delicious drinks you can make with our gins,” says Jones.
Creative drinks director James Irvine is the brainchild behind Eileen’s Bar, which encompasses three bar stations and a combination of tables, banquettes and two-tops.
Patrons can look forward to a menu full of classics utilising Four Pillars’ portfolio alongside local beers, ciders and wines and a range of snacks by chef Matt Wilkinson.
