Chef Timothy Martin will open Harvest and Privi in Melbourne’s South Yarra in February 2017.
Martin has 16 years of hospitality experience and was named the 2015 The Age Good Food Guide’s Young Chef of the Year, while working as head chef at The European.
More recently, Martin has been working as executive chef at The Cut at The Alfred, the Urban Purveyor Group's (now Rockpool Dining Group) steakhouse redevelopment of the former Stokehouse City site.
"Like most I got into this industry with the hopes of owning my own place and for the past two years I've been looking for the right site for my first venture and I have finally found it in a new development in South Yarra,” he said.
"The venue will be a multi-faceted site with the front room housing a bar/coffeehouse/eatery called Harvest. The food will be ‘smart casual’ and offered all day and complemented by a boutique bar and wine program. Privi will be for personalised and private dining and house social events.”
Situated in Claremont Street, South Yarra, Harvest’s focus will be on produce, seasonality and ‘long lived’ techniques including ageing meat, fermentation and butchery. The bar will feature small batch producers, craft beer and naturally fermented beverages, with a strong leaning to wine.
Privi will open shortly after, taking bookings for groups of 10 and more. There will be two private rooms that can accommodate 40-50 guests each, offering tailor-made menus.
