Aria alumni Andrea Castagnola has been appointed as head chef for Sydney cocktail bar Maybe Sammy.
Castagnola’s menu is now running with a range of snacks designed to pair with the venue’s award-winning cocktails.
Some of the dishes on Castagnola’s first menu include a beef tartare on a parmesan tartlet with green peppercorn sauce and duck egg mayonnaise; kingfish tartare on a nori cracker with grapefruit and kombu dressing; plus mini lobster rolls.
There’s also a chicken liver parfait that is served with a chef’s special martini crafted from Seven Spices Hickson Road Gin.

Fans of Maybe Sammy’s toasties will also be pleased to hear Castagnola is still serving the venue’s much-loved truffle toastie with truffled pecorino, cheddar, brie, and pickles.
Guests can also opt for a platter with a range of cheese and charcuterie including LP’s smoked mortadella and salami.
Maybe Sammy will also continue to run its $2 Sydney Rock Oyster happy hour each Saturday.
Maybe Sammy is open Tuesday to Saturday from 4.30pm at 115 Harrington Street, The Rocks, Sydney, New South Wales.
