Flying Fish is set to close its Jones Bay restaurant at the end of 2018. But the seafood restaurant isn’t gone for good, confirming it will move to The Star.
The new Flying Fish is set to relaunch by the end of the year in the space where Italian restaurant Balla formerly operated, which permanently shut up shop in July.
“We’re collaborating with The Star on a new restaurant, I’ve been calling it Flying Fish 2.0,” owner Con Dedes told Good Food. “The restaurant has grown up and I’m pushing it out of home.”
Peter Robinson (ex-Rockpool, Fat Duck) has been appointed head chef and the interior design will be spearheaded by Paul Kelly.
Dedes will also open Little Fish at The Star, described as a “caviar and fish finger sandwich” outlet.
