The group behind Loulou Bistro, The Charles Grand Brasserie & Bar, and Poetica has confirmed it has teamed up with The Langham Sydney to open a restaurant and lounge bar inside the hotel.

The existing restaurant and bar spaces will be revamped to make way for the new concept, which will be inspired by luxury European hotels – think influences from France, Italy, and Spain and a seafood bar.

“While a beautiful space, the restaurant will be very approachable and a destination for Sydneysiders as well as visitors,” says Sebastien Lutaud, director of culinary at Etymon.

The menu is currently a work in progress, but Lutaud has made mention of a fresh crab omelette and a beverage program spearheaded by Director of Wine Paolo Saccone.

“The restaurant wine program will highlight Australian and New Zealand classics alongside fantastic varietals from the Mediterranean coast including Italy, South of France, and Spain,” says Saccone.

“We want to create a lounge bar that rivals the great hotel bars of Paris, London, New York. A luxurious but relaxed and approachable bar where vintage spirits and cocktails are the hero.”

In addition to the restaurant and lounge bar, Etymon will also operate room service at the hotel as well as functions and events menus.

It marks an exciting new chapter of growth for Etymon, which has steadily expanded in the city since it opened Loulou in 2021.

“We see an incredible amount of opportunity in hotel dining and bars here,” says CEO Lisa Hobbs.

The venue name as well as the culinary team is set to be announced shortly.
