Adam Wolfers and Marc Dempsey have announced they will continue to run their Potts Point pop-up until New Year’s Eve 2018.
Ételek was originally slated to close on 13 October, but will operate as normal in the coming months after the concept was so well received by diners.
The team will debut a new menu on 19 October in line with spring and summer seasonality.
Scallop puff with mullet roe, fermented potato pancake with asparagus and green chili will be added to the menu along with smoked whole Eugowra quail, koji and young garlic and wattleseed honey cake.
“After a promising three-months, I’m eager to give diners more reasons to come back and see us,” says Wolfers. “Dishes will be lighter and make the most of the seasons’ new produce.”
Marc Dempsy has also tweaked the wine and cocktail offering, which will see lighter wines become available along with the addition of a four-course wine pairing of local and international wines.
“I’m keen to experiment with the drinks list and introduce some interesting new wines to enjoy with the warmer weather,” says Dempsey.
Ételek is open from 5pm Wednesday to Saturday and from 2pm on Sundays.
