Sydney chef Mat Lindsay has been announced as Two Good Co’s chef of the month for October.

Lindsay is the force behind Ester and Poly, two of the city’s most acclaimed venues, with the chef recently releasing a new cookbook aptly named Ester.

Now, he’s partnered with social enterprise Two Good to put together three options for the Darlinghurst cafe’s lunch menu.

Each month, a new chef contributes a sandwich option, a salad, as well as a dessert, with Lindsay opting for a classic tuna melt that’s dialled up with cornichons, capers, and chilli.

The salad combines cauliflower, egg, upland cress, green apple, and celery with a dressing of apple cider vinegar, mustard, and paprika, with a burnt cheesecake sure to please dessert fans.

Lindsay’s creations are available throughout October with proceeds from sales helping at-risk women affected by domestic violence, homelessness, and trauma.

In addition to being served at the cafe, the cheesecake and salad are also available online.
