Lotus restaurant will return to Sydney for a pop-up under Merivale executive chef Dan Hong.

The concept will take the place of The Fish Shop in Potts Point, which was sold last month after seven years in business.

Merivale CEO Justin Hemmes says the sale presented the perfect opportunity to bring Lotus back. “The opportunity arose to sell the building vacant possession, allowing the new owner to work their magic and take it on its next journey,” says Hemmes. “In the meantime, we’re thrilled to bring back Lotus for one last hurrah.”

Lotus 2.0 is slated to open in spring this year and will see the return of the venue’s signature Mediterranean-style menu with an Asian twist. Diners can expect to see the cheeseburger on offer alongside cult dishes such as tuna with sweet wasabi and fudge sundae.

“Lotus was the beginning of my journey with Merivale and my first position as a head chef,” says Hong. “I was only 24 years old and hadn’t yet developed a distinctive style, but Justin trusted me to cook what I loved and thought was delicious. They were some of the best years of my career and it means so much to go back and cook where it all began.”

The Fish Shop’s final service will be held on Sunday 16 June before it closes for a short refurbishment.
