Craig Cook The Natural Butcher and Steve Costi’s Seafood have teamed up to launch a fresh food and dining collaboration in Mirvac Retail’s Broadway Shopping centre in Glebe Sydney.
Both The Natural Butcher and famous fishmonger are offering a range of fresh meat and seafood for retail, with the option for customers to dine in too.
An open kitchen is situated between Craig Cook The Natural Butcher and Steve Costi’s Seafood, giving diners an opportunity to choose cooked-to-order menu items.
Seafood snacks include Cloudy Bay Diamond Clam popcorn and crispy fried school prawns with chipotle aioli, while battered NZ hake or Australian barramundi with chips and salad will provide more substantial meals. Grab and go options such as poké bowls, a classic prawn cocktail and Australian
potato salad with Tasmanian smoked salmon will be available as grab and go options from a display fridge.
The meat menu will offer minute steak and salad, crumbed veal schnitzel, gourmet smoked hot dogs or double beef cheeseburger, pickles, and special sauce on a potato bun, with a “surf” of two Australian panko-crumbed prawns with aioli available. The dine-in venue will also be licensed.
Costi’s Fish & Chips operate a number of venues throughout Sydney, with Steve Costi’s father Con first opening a fish shop in Lakemba in 1958. Costa Nemitsas has taking on the Broadway venue to make it a flagship seafood retail destination.
Master butcher Craig Cook owns and runs Tova Farm in the Southern Highlands which supplies much of Craig Cook The Natural Butcher stores with premium beef. Cook sources Wagyu from AACo.
The retail offerings blend two shop fitouts using stone and dark timbers, feature tiles, brass and glass, while the shared dine-in Cook with Costi space offers seating both in-store and in the market zone. There will also be cooking demonstrations and fresh food showcases to entertain and inform shoppers at Broadway Sydney.
