Irish chef Colin Fassnidge of Paddington’s Four in Hand Dining Room has plans to open a fish 'n chipper-style caf across the bridge on Sydney’s lower north shore.
Speaking with Good Food, Fassnidge says that the new eatery will offer takeaway, but will be presented in caf style format as opposed to a traditional fish 'n chipper.
While the fish 'n chip concept is quite far removed from his signature suckling pig dishes, Fassnidge says that fond childhood memories of simple seafood done well is something that he is very interested in doing.
“Part of it for me is nostalgia for my youth, but I also think there’s a great market [on the lower north shore] for families."
Fassnidge says that he is still scouting for locations for the new site, but plans to have his new venture up and running next year.
