Clayton Wells (Automata, Blackwattle Singapore) has announced a new venture dubbed A1 Canteen.
The all-day diner will be located on Kensington Lane in the Old Rum Store and will be headed up by Automata sous chef Scott Eddington and assistant manager Rachael Trewin.
“We’ve been waiting for the right space to open something permanent,” Wells tells Good Food. “Finding a site directly across the road from Automata is a dream.”
Coffee will be supplied by Single O and menu items will include curried scrambled eggs with LP’s Quality Meats’ pork sausage; fried eggplant, provolone and romesco sandwich and roasted flounder with espelette pepper and fried curry leaves.
Cocktails and wine will also be on offer alongside produce from LP’s Quality Meats. Takeaway will also be available.
The venue is set to open in early 2018.
