Pope Joan’s Matt Wilkinson has joined the Four Pillars Gin team as creative director of ‘all things made from gin’.

The chef is working on a range of products using Four Pillars Gin which will include gin butter, salt and gin vinegar crisps, gin cheese biscuits, gin pickles and gin-cured and smoked olives.

In addition to the product line, Wilkinson is working on smallgoods including salami, prosciutto, bacon and sausages.

The Made from Gin range is part of the brand’s commitment to sustainability, with a number of byproducts from the distilling process incorporated into the product range.

“It’s truly amazing how much more you can do with gin and all the great by-products involved,” says Wilkinson.

The products will primarily be available from the distillery in Healesville, Victoria, but will be available at selected events across the country.
