Melbourne chef Charlie Carrington will open his second restaurant this month, COLOURS by Atlas.
A more casual spin-off of his fine diner Atlas Dining, COLOURS will showcase the flavours of five countries: Greece, Vietnam, Israel, Peru and Mexico.
“I am extremely proud of my first fine dining restaurant Atlas Dining but it’s now time to share more COLOURS of my world with you,” Carrington said via Facebook.
“Our ever changing menu, covering five amazing countries, features fresh, locally farmed produce and a ton of inspiration from my travels.”
The menu at COLOURS will change every four months and will focus heavily on sustainability.
Dishes on the opening menu include lamb with hummus, Israeli salad and pickles and Vietnamese-style steamed chicken with pickled green chilli dressing, cabbage and Vietnamese mint.
The 20-seat restaurant will open in Prahran on 13 February.
