Bakery juggernaut Bourke Street Bakery is coming back to Potts Point, reclaiming the location it vacated for Paper Bird in 2017.
The Paper Bird team held their final service on Saturday 3 August and Bourke Street hope to relaunch the space in the next two weeks.
“It hasn’t worked out for them [Paper Bird], but it’s always been a good spot,” co-owner David McGuinness told Good Food. “We’ll just drop in a few ovens.”
McGuinness also mentioned plans to expand on the traditional concept of the bakery and run the space as a full-service restaurant a few nights a week, but he says that will be “down the track”.
The Potts Point store is the 12th location for the brand, which also opened its first international location in New York in May.
