The team behind Bondi eatery Blanca will open its first pop-up, Ramen x Burgers, on 9 May.

Located in Blanca Bar, next door to Blanca Dining, the pop-up is collaboration between chefs and business partners Tomi Björck and Samuel Cole.

The concept was inspired by Cole’s recent trip to Japan where he met local chefs and learnt a range of new cooking techniques.

“We love ramen and burgers and wanted to bring something new to Blanca Bar that would excite the locals and regulars,” he says.

Ramen options include shoya (soy, mushroom broth, pickled egg, daikon, mushroom pickle); spicy ramen (spicy chicken broth, kimchi, bamboo, coriander and cucumber pickle) and tonkotsu (pork and miso broth, pickled greens, daikon and bamboo pickle).

Diners also have the option to customise their ramen by selecting roasted pork belly, seafood, crispy chicken or roasted Portobello mushroom as their protein.

Burger options include the wagyu burger with kimchi mayo cheese, tomato and lettuce; salt and pepper softshell crab with kimchi mayo, red cabbage pickle and kohlrabi; chicken katsu with cabbage, miso mayo, tomato and lettuce and Portobello with miso may, kohlrabi, tomato, cheese and lettuce.

The sides menu will feature furikake fries with kimchi and spicy mayo, beef tartare wrapped in sesame leaf and crispy oxtail dumplings with black vinegar and chili.

Specialty crockery, paintings and lamps were also hand-sourced from Japan to create an authentic dining experience.
