Young talent Simon Palmer has joined Beach Byron Bay as head chef.
Palmer was previously the head chef at Philip Johnson’s Brisbane fine diner, E’cco Bistro and also worked in the kitchens of Urbane and Gerard’s Bistro.
“We are thrilled to be welcoming Simon Palmer to Beach Byron Bay as head chef,” says Ben Kirkwood, co-owner of Beach Byron Bay.
“Simon is a very talented chef whose vision, skills and experience are perfectly suited to Beach.”
Palmer has been hard at work redesigning the restaurant’s menu, which the chef says is influenced by the venue’s natural surroundings.
“It has been a pleasure to create a menu that compliments this setting and pays homage to the location and its talented producers.”
Beach Byron Bay is open seven days from 7am for breakfast, lunch and takeaway with dinner launching from 1 July.
