Celebrated European-Australian Chef Ashley-Maree Kent is set to open the doors to Ramona Trattoria in Brisbane’s Coorparoo on 14 August.
The 48-seat Italian restaurant will provide guests with an elevated casual dining experience.
“Everything about the restaurant speaks to this ethos, from the worn-in aesthetic to the open kitchen and seasonal menu,” says Kent.
“I want families in Coorparoo to have a local place that feels familiar where they’ll be able to dine in and eat delicious food once or twice a week.”
The monthly-menu will feature a vast selection of handmade dishes encompassing pizza and pasta.
Dishes will rotate based on the season with ingredients sourced from provedores located across the state.
Guests can expect to see pappardelle with Tuscan wild boar ragu and pecorino romano; hand-cut tagliatelle with ragu bolognese and parmigiano and agnolotti del plin topped with chestnut and truffle in brodo.
The drinks list features a range of natural and conventional local and international wines along with cocktails.
Mixologist Tom Angel has curated a bespoke cocktail list that includes Ramona’s Martini made with yellow tomato and basil oil; a Rossini Spritz with roasted strawberry and an Averna highball.
Kent was most recently the Owner and Head Chef of Cross-eyed Mary in Coolangatta and was named Urban List’s 2019 Young Chef to Watch as well as a finalist in Appetite for Excellence’s Young Chef National Awards.
Ramona Trattoria is open Monday to Sunday.
