The team behind South American venues Tan Telmo, Palermo and Pastuso have opened a new restaurant in Southbank, Melbourne.
Executive chef Oliver Gould is spearheading Asado, which revolves around an open fire pit and bespoke charcoal parrilla grill.
Asado is all about Spanish cuisine and will dish up jamon boards, tinned seafood and a drinks list spanning wine, sangria and sherry.
Menu items include grilled beef tongue skewer with chimichurri; jamon consommé with swordfish skewer and charred baby octopus with smoked paprika and squid ink.
Asado will also open Sandwicheria in the coming months, which is set to offer casual fare to cater for office workers.
