Amara restaurant in Spicers Sangoma Retreat has announced it will open to the public.

The Blue Mountains eatery was previously only accessible to guests staying at the hotel.

From 5 March, diners will be able to enjoy a five-course meal ($85) for lunch Friday to Sunday or a seven-course menu ($125) for dinner throughout the week.

A ‘Harvest’ lunch menu ($85) will be available Monday to Thursday and is set to feature one protein alongside four organic vegetables plus dessert, with most produce sourced from Harvest Farms.

Head chef Will Houia’s approach showcases hyper-local ingredients, with most produce sourced from within 100km of the site.

“We have built incredible relationships with our local suppliers and work together to deliver the finest produce the region can provide and bring out it’s best in the kitchen,” says Houia.

Dishes include heirloom tomato, basil, cucumber and chamomile, squid cooked over charcoal and braised lamb shoulder with butter beans and broccoli.
