Pyrmont’s craft beer institution the Quarryman’s Hotel has welcomed a new bar. The Rooftop will offer a range of signature cocktails alongside a food menu that pays tribute to pub classics in a bright and airy space designed by Sydney-based designer Matt Woods (Bloodwood, Devon).

Eats include starter plates such as chicken tacos with salsa fresca, chunky guacamole, and buffalo wings accompanied by blue cheese sauce, while the list of mains features a salmon poke salad with ginger and mentsuyu sauce and a pickle fried chicken burger served with old bay fries.

The drinks list showcases several local craft beers (think Young Henry’s, Balter, Stone & Wood) and many wine varietals as well as house-made cocktails, including the the ‘palma rosa’, with El Jimador Blanco, rosé, ruby grapefruit juice and ginger syrup, the ‘apple cider slush’, with Young Henry’s Cloudy Cider and house-made honey syrup, and a Spritz served with grapefruit vodka and lemon myrtle kombucha.

With pastel pink walls and cactus details, Woods design draws inspiration from a modern, mid-century ethos with clean lines, textural hard-wood flooring and light fixtures to create a light-filled indoor and outdoor space.

The Rooftop is open from 12pm, Wednesday to Sunday.
