It’s been a busy few months for The Mulberry Group launching their second venue in three months with the opening of Lilac Wine.
Located across from their own Square One Coffee Roasters, Lilac Wine will be a homely neighbourhood wine bar on the back streets of Cremorne.
“We want to be the go-to wine bar here and we can’t wait to be serving some great drinks and eclectic plates to our neighbours and all the visitors that flock to the area,” says Founder Nathan Toleman.
“You’ll come for a drink and a bite to eat, and want to stay for the smooth sounds of records, the roaring fireplace, DJ’s and of course, the disco ball.”
Michelin star chef Kyle Nicol (ex-Rascal) will be crafting a menu featuring nostalgic Australian dishes teamed with local produce and classic French bistro influences.
Nicol will age his own meats in-house to make charcuterie offering as well as conduct regular foraging trips to source local produce.
Expect to see creations showcasing wood-fired cooking along with house-made cheeses, vinegars, sourdough and koji-based products.
Dishes including red wine egg, celeriac remoulade and eucalyptus will star alongside chicken mousse éclair, black garlic and honey.
Head sommelier Richard Buck (ex-Aru) will be curating an adventurous wine list, focusing on boutique producers doing something outside the box, as well as sake.
Former Shōbōsho star Charlotte Martin rounds out the core team, taking on the role of venue manager and also contributing to the drinks list.
As with all Mulberry venues, the venue will donate 10 per cent of profits to the Common Ground Project in Victoria.
Lilac Wine will open on 3 February and is located at 31 Stephenson Street, Cremorne.
