Momento Hospitality’s The Governor Hotel in Sydney’s Macquarie Park is set to welcome new Cantonese restaurant Jinja on 3 August.

Located on the third floor of the hospitality site, the 218-seat restaurant combines authentic Cantonese recipes with contemporary flavours.

Head Chef Sebastian Tan is leading the kitchen after working in Silks and Teahouse at Crown Sydney.

Tan will team up with Speciality Chef Kushal Lama who brings 16 years of experience working for award-winning restaurant brands Hakkasan and Yauatcha.

The menu encompasses more than 20 dim sim, live seafood such as lobster and coral trout, BBQ dishes and a range of Chinese rice and noodles.

Dim sim includes sesame prawn brioche, black garlic wagyu beef sui mai and dumplings such as, edamame, XO southern lobster scallop, prawn chives and winter truffle king prawn.

Mains include the signature BBQ smoked pork ribs, grilled wagyu with black truffle yakiniku sauce, wok-grilled lamb chop and Nan Jing-style crispy pork belly.

On the beverage front, the restaurant will offer an extensive tea selection which can be sampled with a ceremonial tea tasting dispensary situated in the dining room.

The bar will serve up baijiu (clear liquor in Mandarin) from the largest selection in Australia alongside classic cocktails with a twist.

Guests can also expect a 100 plus wine list that covers international and local labels, rare and specialty drops, champagnes and reds.
