Table For, the new in-house food and beverage group from Australia’s largest hotel operator, Accor, will open its first venues next month.
In collaboration with the Maybe Group (Maybe Sammy), Bar Allora will open in Bond St in mid-November, while El Vista will open in Circular Quay later in the month.
Bar Allora is a modern Italian bar and restaurant, inspired by the fast-paced rhythm of Milan. Guests can stop for a quick espresso, linger over a negroni or martini, or settle in for a vibrant dining experience.
The venue will be led by Table For Culinary Director Chef Rosy Scatigna and Head Chef Josh Donachie (Jane, Jackson’s on George, Re).

The menu celebrates Milan’s post-war restaurant boom and the southern Italian immigrants who shaped its soulful approach to food.
Co-Founder and Director of The Maybe Group Vince Lombardo says exactly ten years after opening Maybe Frank they wanted to bring back a 100 per cent Italian experience.

El Vista, inside Pullman Quay Grand (formerly Hacienda), is a Latin-inspired escape transporting guests to the golden era of 1960s Acapulco.
Giovanni Pilu has devised the fresh Latin America menu. Designed to be shared, it will include aguachile de seriola, torita de cangrejo, and golden corn dough with cheese empanadas, and street-food favourites like yellowfin tuna crispy tacos and chorizo hot dogs.
The Maybe Sammy crafted the cocktail menu with classics like margaritas, daiquiris, palomas, and piña coladas, alongside inventive creations like a smoky mezcal old fashioned, a spiced rum-and-coffee cocktail spiced, and a chilli-laced tequila spritz.
Afternoons will include Latin jazz, evenings will include electric disco, and weekends will offer acoustic brunches and Latin nights.
The Maybe Group Co-Founder and Director Stefano Catino says with El Vista, they wanted to create a bar that felt like stepping into a different world.
“It’s about energy, elegance, and storytelling, from the music and cocktails to the atmosphere and design. Every visit is an escape, a chance to experience the glamour and rhythm of 1960s Acapulco right here in Sydney,” says Catino.
In announcing Table For last month, Accor said the group is designed to set new standards in culinary experience, creativity and commercial performance. It will build on Accor, which has a portfolio of more than 440 restaurants, bars and cafes, with a focused investment in culinary innovation and guest experience.
In early December, it will also open Flaminia, from the team behind Pilu at Freshwater. The harbourside restaurant from Giovanni Pilu and Marilyn Annecchini will celebrate the warmth, flavour, and produce of Italy’s portside dining in the heart of Circular Quay.
