The staffing session will see four hospitality professionals from Trader House, Stokehouse, The Mulberry Group, and Hector’s Deli take the stage for a 35-minute panel addressing points including:
- The most effective recruitment platforms
- A review of the current talent pool
- Education and training programs
- Staff initiatives
Sarah Dougas is the people and culture manager at Trader House, the group behind globally lauded fine diner Gimlet, newly opened bar Apollo Inn, Marion, Supernormal, The Builders Arms Hotel, Cumulus Inc., Morning Market, and Meatsmith.
Trader House, established by Andrew McConnell and Jo McGann, is behind some of the city’s most foundational eateries and has long maintained a stellar reputation as an employer-of-choice.
Dougas will be joined by Stokehouse’s Restaurant Manager Lee Smith, who has worked in hospitality for 16 years and counting. Smith, who has owned his own South Yarra wine bar, believes customer experience and valuing service are two integral components of a successful business, with the manager working closely with staff to develop a positive workplace culture.
Hector’s Deli has recently appointed Adam Brownell as CEO of the iconic sandwich concept. Brownell has spent the last eight years with Grill’d and is ushering in a range of changes at Hector’s, including flexible working hours – something that isn’t commonplace in this landscape.
Nathan Toleman rounds out the panel and is the founder and creative director of The Mulberry Group – the force that’s spearheaded iconic eateries including Hazel, Liminal, Square One Coffee Roasters, and more.
