Hospitality operators are launching wine stores after a precarious holiday season followed by the COVID-19 pandemic.

It’s not an ideal business model, but wine can provide much-need cashflow for venues with reserves of carefully selected vintages. And for those who take the time to get it right, the move could continue to complement their core offering beyond the coronavirus crisis.
