The team behind Salt Meats Cheese will launch a new late-night restaurant in Brisbane’s Fortitude Valley on Thursday 30 July.

Occupying the spot previously taken by Longtime, Eterna will combine the food of Rome with the energy of New York, in a sophisticated but laid-back venue. Authentic Roman snacks and pasta will be paired with classic gin martinis and the Roman answer to Negronis, the Cardinale.

“When we decided on a Roman-style menu, we focused on the cornerstones of la cucina Romana,” says general manager, Rome-born Flavio Tripepi. “Our cacio e pepe and carbonara will be must-try dishes on the Eterna menu.”

The pared-back menu will showcase the Roman ethos: seasonal ingredients, simple preparation and house-made pasta. Think tonnarello cacio e pepe. Diners can also expect suppli (a street-food style arancini), pollo alla Romana and porechetta di Ariccia, as well as desserts such as crostata ricotta e visciole (ricotta and sour cherry cheesecake) — all Roman staples. A range of local and Italian wines and classic cocktails will complement the food offering.

Eterna might have a late-night spirit perfect for celebrations, but the team, including Tripepi and owner Stefano de Blasi are looking forward to welcoming local residents and workers for knock-off drinks and mid-week dinners. And, lunchtime is in the works too.

Eterna will open from 5 pm to midnight Tuesdays–Thursdays, and until 2 am on Fridays and Saturdays, with the kitchen open through to 11 pm.
