Fitzroy’s new addition TheStandardX hotel has unveiled its rooftop bar just in time for the warm season.
The Roof is located on the seventh floor, and features panoramic views of the suburb and Melbourne’s CBD.
“The idea of The Roof was to create a green oasis for guests to casually mingle and indulge in Mexican inspired snacks and drinks, while being submerged into the Fitzroy culture from above,” says Verena Haller, designer at Standard International.
There’s plenty of seating for guests to enjoy the space and menu, with Executive Chef Justin Dingle-Garciyya putting together a selection of dishes that complement the drinks offering.
On the snacks front, green pea avocado dip is served with blue corn chips, while fried squid is teamed with burnt lime aioli. There’s also grilled corn with chipotle mayo and Manchego for those after something moreish.
Larger options span tostadas as well as raw tuna with avocado, pickled cucumber, and sesame plus slow-cooked, smoked beef brisket with pickled veg.
The wine list leans towards minimal-intervention options with plenty of spirits also on offer including jalapeno-infused agave and yuzu gin.
Classic cocktails are also available, with margaritas set to evolve throughout the months.
The Roof is open from 3pm on Fridays, from midday on Saturdays, and from 11am on Sundays.
