Pullman Quay Grand Sydney Harbour appoints new chef

Pullman Quay Grand Sydney Harbour has appointed Joshua Davidson as executive chef of Q Dining and Hacienda Sydney.

Davidson has a career spanning 21 years and has worked all over the world in fine dining restaurants and wineries including Margan Restaurant in the Hunter Valley and The Apollo in Sydney.

During Davidson’s time at Margan, the venue received Best Restaurant at the Australian Tourism Awards in 2012 and Best Restaurant at the NSW & Hunter Tourism Awards in 2013. While working at The Apollo, the venue was awarded one hat from The Good Food Guide.

With a focus on using seasonal food utilising modern techniques, Davidson is committed to environmental sustainability initiatives, and his zero-waste philosophy has him travel to local produce markets to ensure he is using the highest-quality ingredients.
