Quick Brown Fox Eatery in Sydney’s Pyrmont will launch a pop-up taqueria in the evenings.

Buen Taco will kick off from Wednesday 4 August and offer everything from carnitas and birria tacos to the ultimate frozen margarita.

“We’ve wanted to launch an evening offering at Quick Brown Fox Eatery for a while now and lockdown spurred us into bringing this takeaway taqueria concept to life,” says Ben Calabro, co-owner of Quick Brown Fox.

The menu has been designed by Head Chef Regan Bagshaw and will cover four tacos including the aforementioned birria (queso asadero, slow-cooked shredded beef, onion and coriander served on a fried tortilla with dipping broth) and carnitas (pulled pork shoulder, black beans, shaved cabbage, green chilli and pineapple salsa served on a blue corn tortilla).

Baja (crispy Australian flathead, pico de gallo, shaved cabbage and lime crema on a soft tortilla) and tinga (shredded chicken, chipotle, iceberg lettuce and poblano crema served in a hard-shell taco) round out the offering.

Diners will also be able to add on sides to their order including three-cheese beans with white corn chips and jalapenos (optional add-ons of avocado, pulled pork, shredded chicken and slow-cooked beef); spiced Mexican rice and an iceberg salad with pickled Spanish onion and jalapeno dressing.

Finish off the meal with apple enchiladas topped with mole spiced-chocolate sauce.

Buen Taco is slated to run until early October from 5:00-9:30pm for pick-up and delivery.
