Darren Jones (previously of Aria, Icebergs and No. 8 by John Lawson) has taken on the head chef role at Melbourne’s Om Nom Kitchen & Dessert Bar.
In his new role, Jones will work alongside executive pastry chef Christy Tania, serving up a new savoury menu that adheres to his food philosophy of creating simple dishes that champion great produce.
Jones' dishes are designed to share, and include the likes of beef and beer sliders with caramelized onions; beef tartare with salted yolk; fried goats cheese with sage, honey and toasted almonds; chicken karaage with miso mayonnaise; and pork and veal meatballs with kaffir lime infused Napoli.
Oysters will also be available daily served either natural, or with a special garnish which will change daily.
