Hawksburn locals Andrew Bayley and Michael Perri (4 Cousins Supermercato, Parkdale) have launched Carvery into the village, a little over 4km south east of Melbourne’s CBD.
The takeaway shop looks to blend the nostalgia and accessibility of an old-school chicken shop with the considered and modern settings of premium delicatessens.
Carvery was born out of a mutual love for the familiarity of a takeaway shop with a taste for good quality produce and design, say Bayley and Perri. They aim to hero the roast and highlight good quality eating with the local community front of mind.
“We were inspired by the carveries we grew up with that were such staples to the community,” says Bayley, “such as the Toorak Carvery that used to be out the back of the Toorak Village Car Park.”
“Most Australians have memories of those roast chook dinners our mum used to pick up or a take-away roast roll with gravy. We wanted to replicate that feeling of nostalgia, but dial up on the fresh, quality produce and deliver it in a beautiful setting.”
Expect Victorian roast meats by the weight, a daily salad bar, fresh house-made rolls, a grab-and-go fridge with ready-made meals, as well as a grocery section stocking premium condiments.
Available for catering, dine-in or takeaway, find Bannockburn chicken available in quarters, halves, whole, or whole butterflied, alongside Otway pork, lamb from the Western District of Victoria and Tasmania, and Black Angus beef from the Goulburn Valley, available by the kilogram or per serving. Dinner packs of roast meats served with salad or veggies and chips are also available as an easy meal for one or the whole family.
Rounding out the roast offering, Carvery will also serve up roast rolls made daily in-house. In addition, a salad bar with fresh produce sourced daily from the markets offers classic choices to a selection of super salads, while a grab-and-go fridge will offer classic ready-made meals such as lasagne, eggplant parmigiana or even a traditional Italian tiramisu.
On the drinks front, Carvery will be serving all the classics as well as freshly squeezed orange juice, sparkling water and soft drinks.
Melbourne-based architectural studio Nisk Design has reimagined the former site as a welcoming venue for takeaways and drop-in diners. Reminiscent of the 70s and 80s, Carvery is designed with black, white and brown terrazzo flooring, warm timber panelling, marble benches, purposeful, European-inspired staff uniforms and disco music playing overhead.
