The Stables has opened in Paddington, revolving around modern Australian cuisine, modern cocktails and a premium wine list.

The restaurant is located in an iconic 1800s sandstone building which has been restored over a number of years.

Executive chef Thomas Gripton, previously from Bentley, Yellow and Restaurant Hubert, has designed a menu that showcases local ingredients.

The menu is split up into share plates, entrée, mains, sides and desserts.

Diners can start their meal with Sydney rock oysters or burrata with San Daniele prosciutto before moving onto butter-poached lobster or oxtail croquettes with beetroot and potato puree, pickled beetroot, chickweed and pink pepper sauce.

Mains span from slow-cooked pork jowl to braised lamb belly, grilled spatchcock and John Dory fillet and dessert options include chocolate fondant with berry ice cream and honeycomb or black tahini sponge.

Wines are mostly Australian and the venue says premium wines typically only available by the bottle can be ordered by the glass.

15 Australian craft beers are also on offer, along with a cocktail list by head bartender Pat Jonson. Highlights include the Strawbasil with chili, basil, vodka, Grand Marnier and apple and the Aqua Limon with vodka, mint, lemon juice and gomme.

The Stables is open for lunch, dinner and drinks Tuesday to Sunday.
