Momento Hospitality has confirmed they will open a multi-level pub in the Sydney suburb of Macquarie Park.

Set to open early July, The Governor encompasses a main bar, 160-seat bistro, rooftop bar called Ess and garden terrace all designed by Edith Clark.

Head chef Luke Lashford (ex-Sheraton on the Park, The Australian Hotel & Brewery) has designed all the menus, with dishes including teriyaki chicken poke salad, wood-fired pizzas and Flinders Island lamb shoulder.

Ess has an Asian-focused menu that revolves around small plates including wagyu beef skewers and chicken wings with a yakitori glaze.

Lashford says a great pub is a place that caters for a range of customers and has plenty of options.

“That’s the key to creating a pub where you’ll want to return time and time again,” he says. “And it’s exactly what The Governor is all about. It’s somewhere you can settle in no matter what the hour and be well fed and watered no matter where you decide to perch.”

Bar manager Andrew Ratcliff (ex-Baxter Inn, Eau de Vie) has been working closely with Lashford on the drinks list that will feature classic and seasonal creations designed to match the kitchen menu.
