The ‘home of the world’s best Negroni’ is bringing a taste of its signature hospitality to Sydney.

Melbourne’s Bar Americano will pop up at Icebergs in Sydney’s Bondi during the month of August.

The pop-up will see a ‘bar within a bar’ constructed by Preset Constructions and mirror the Melbourne location, which sees room for seven seated guests or 10 standing patrons at a time.

Bartender and Founder Matthew Bax will be mixing up eight to 10 drinks a night, with classic cocktails the name of the game.

The menu is split into sweet, sour, dry and spice with vodka, gin and tequila featuring heavily.

The Antica Fashionista is a tribute to Icebergs’ Maurice Terzini and sees Amaro Americano combined with whiskies, aged and spiced fruit gum syrup and aromatic bitters for a “very Italian” version of an Old Fashioned.

The signature Negroni is a must-order during the stint, with Bombay gin, martini, house vermouths and Italian bitters coming together in a “simple but secret blend”.

A martini also makes an appearance alongside an Americano, an Aviation, a mimosa, a bombolone and a Rick Dalton, inspired by the namesake’s “Hollywood poolside blending”.

A short and concise snacks menu covers pecorino and Alto olives; wasabi melon with David Blackmore Wagyu bresaola; smoked bacala and Yarra Valley salmon roe cruller and a cotechino and fontina burger.

The bar will officially launch on 5 August and run until 4 September.

It will open across a series of 1.5-hour sessions from Wednesday to Sunday.
