Icebergs’ Maurice Terzini and Scout’s Matt Whiley have teamed up to launch a new Sydney project.
RE- is set to become the world’s first permanent zero-waste bar, with the venue setting up shop in a heritage site on Locomotive Street in Everleigh.
“RE- is a cocktail bar, first and foremost – a place for people to hang out, have fun and leave knowing they’ve enjoyed excellent service, good food and great drinks with their mates”, says Whiley.
“But if you strip back the layers, you realise there is so much more at play here. We care about our environment, we care about people and we care about our future.”
Whiley will curate an evolving list of 8-10 cocktails, with highballs, spritzes and classic options on offer; but all will built on diverted waste.
On the food front, RE- is taking the toastie route, with flatbreads and bar snacks made with reclaimed and sustainable products.
“Just because it’s made from offcuts or seconds doesn’t mean it needs to be virtuous,” says Terzini.
The venue will revolve around a central bar and tables crafted from recycled bottles and tupperware, with an upper level mezzanine dedicated to hosting masterclasses and group bookings.
RE- will open in February 2021.
