The figures behind Luna Wine Store and Lo-Fi Wines have teamed up to open a new natural wine bar in Byron Bay come October this year.
Located on Jonson Street, Bar Heather will offer a natural wine-centric menu curated by Sommelier Ollie Smith and Tom Sheer, co-owner of Lo-Fi Wines, Luna Wine Store and Bar Heather.
“Over the years, we’ve collected some very special bottles and always thought that if we ever opened a drink-in venue, this is where they would go,” says Sheer.
“We only plan to do this once, so we figured we better do it right.”
Guests can expect the rotating wine list to work harmoniously with the food offering, which will be spearheaded by Chef Ollie Wong-Hee, who joins after time at Ester, Sixpenny and Franklin.
Sheer and fellow Bar Heather co-owner James Audas (Lo-Fi) first met Wong-Hee at a wine festival in Hobart and the rest is history, with the trip recently travelling to France to meet winemakers.
Dishes will cover snacks, small plates and larger mains designed to share, with debut plates including potato chip with comte and shiitake, grilled king prawns with curry leaf and duck confit.
The 60-seat bar will open Wednesday to Sunday from 5pm until late from early October.
