The final venues to join 80 Collins have been announced, with a café, casual eatery, dessert outlet and an urban cellar door rounding out the food and beverage offering at the Melbourne development.

Charlie Carrington will launch Colours Bowls, a spin off of casual eatery Colours by Atlas, which will offer plant-based cuisine. The menu will be inspired by Mediterranean flavours and Carrington’s recent trips to Tel Aviv, Israel.

Richmond’s Mayday Coffee & Food and Albert Park’s The Petty Officer have announced Maverick, which will be located on the ground floor of 80 Collins. The café will offer specialty coffee from Axil Coffee Roasters and a menu that revolves around local and seasonal ingredients.

Pastry chef Christy Tania will open dessert shop Glace, which will be spread across two levels. The ground floor will reflect a Parisian patisserie, with cakes, ice cream, desserts, coffee and high tea available. The second floor will house a dessert bar, which will focus on plated desserts, dessert cocktails and a dessert degustation.

Handpicked Wines will open their first Melbourne cellar door, offering curated wine flights, regional cheeses, charcuterie, barrel tastings, wine workshops and blending classes.

The four outlets join venues spearheaded by Chris Lucas, Martin Benn and Vicki Wild, Speakeasy Group and Farmer’s Daughters by chef Alejandro Saravia.
