Hunter St. Hospitality – the group behind Rockpool Bar & Grill, Saké Restaurant & Bar, and The Cut Bar & Grill – is launching Rockpool Lounge, a late-night cocktail bar above its namesake restaurant.
Rockpool Lounge is set to open Thursday, March 13 and is aimed at patrons looking for an elegant bar to unwind or conclude an evening.
Bar Manager Leonardo Zuccardi Merli developed the cocktail menu with classic recipes featuring modern twists at its heart. Signature drinks include a dirty frozen martini with Taggiasche olives ($30); a coconut negroni ($30); and the Horse’s Neck highball with cognac and ginger ale ($20).
Rockpool Executive Chef Santiago Aristizabal has crafted a selection of snacks and more substantial dishes to accompany the drinks, with influence from his South American heritage. The menu features wagyu brisket empanadas with pebre; wagyu tongue tacos with bone marrow salsa, red onion, herbs, and lime; and the signature Rockpool cheeseburger with double-smoked bacon and special sauce.
“Today’s guests look for an experience that genuinely enhances their evening,” says Hunter St. Hospitality CEO Frank Tucker. “Our aim is to enrich Sydney’s nighttime scene by offering a space that extends the dining experience seamlessly and also welcomes hose in search of a sophisticated yet relaxed lounge bar, whether they are dining with us or not.”
Rockpool Bar & Grill has also received an update and capacity increase, with expanded banquettes, booths, and refreshed seating. The group has also refreshed two of the four private dining rooms, and added a new 12-person wine room.
This news follows Hunter St. Hospitality’s recently announcement of The Collective, a group of venues centred on Argyle Street in The Rocks opening April 11.
