The team behind Etta in Brunswick East has revealed its new venture, Daphne, will open in the former Bar Romantica site on Lygon Street this September.
Just a few doors down from Etta, the venue will be significantly larger than its counterpart, with 125 seats, and is designed to be a true community hub. Daphne will feature two distinct areas: a casual bar at the front for walk-ins and outdoor seating, and a restaurant with table service and a semi-private dining room for up to 30 diners at the back.
Restaurateur Hannah Green described her vision for Daphne as “a welcoming space where everyone feels comfortable, and that isn’t just for special occasions. Somewhere friends can drop in for an impromptu cocktail a couple of times a week, and parents can take the kids for an early meal before heading home for bath time.”
A custom Samuel Frarracio (The Brick Chef) wood-fire grill and oven will form the heart of the open kitchen, and shape the simple, European-leaning plates. The head chef is expected to be announced in June 2025, with the menu promising one-plate meals and snacks that reflect Melbourne’s diverse food culture. Daphne aims to be inclusive, offering early-bird sittings and ‘happy meals’ for children and regular themed nights like steak night and midweek noodles, appealing to families, groups, couples, and hospitality workers alike.
The restaurant will also make the most of its late-night licence, serving snacks and drinks until midnight on Fridays and Saturdays. The wine program, overseen by sommelier Ashley Boburka (Etta, Rockpool), will feature both wines on tap on-tap by Yarra Valley winemaker Dom Valentine, and access to Etta’s extensive 400-bottle list, alongside a thoughtful cocktail selection by Sam Peasnell (Etta, Dom’s Social Club). IF Architecture designed the venue, blending new elements with original Bar Romantica features.
Green’s background includes time as front of house at acclaimed Melbourne venues such as Andrew McConnell’s 312 and Ben Shewry’s Attica, before opening Etta in 2017. She’s known for her holistic approach to hospitality, focusing on creating a relaxed, welcoming environment. Green has been recognised for her contributions to the industry, winning the Service Excellence Award at The Age Good Food Guide Awards 2024 and nominated for Gourmet Traveller’s Restaurant Personality of the Year in 2022.
