Sydney’s the Rocks will welcome Frank Mac’s Gin-focused cocktail bar on 22 October.

Co-owners Ciara Doran and Eoin Daniels are excited to add Frank Mac’s to their repertoire after opening The Doss House on the same street in 2018.

“The Rocks is one of Sydney’s oldest neighbourhoods and one of the most exciting,” said Doran. “It’s such a picturesque precinct filled with history and heritage, which is what first drew me to it when we opened The Doss House.”

Over the last couple of years, it has become a destination for unique, character driven venues so I’ve always seen it as the perfect location for Frank Mac’s.”

Cocktail highlights include the Mac Martini which sees Eristoff Vodka, JJ Whitley Gin, Dolin Dry vermouth combined with a house-made olive brine in addition to the Croney Horne, which is a take on a gimlet.

The new establishment will be home to 100 plus juniper blends with a mix of award-winning international gins such as Fords London dry and Whitley Neil Handcrafted gin.

Also on offer will be Botany Bay a collaboration with local distillery Four Pillars and Hernö from Sweden.

The menu will have snacks to share such as the 24 hour gin-cured salmon with Yarra Valley shiraz gin caviar and smoked mozzarella and basil arancini.

Guests can also expected toasted panini with truffle-infused sopressa and smoked provola and sliced cornichon as well as a beef and Guinness and Irish curry pie.

Frank Mac’s is now open Wednesday to Sunday for walk-ins and bookings.
