Four Pillars have officially opened the doors to its newly upgraded Healesville headquarters and distillery in Victoria’s Yarra Valley.

The project has been in the works for two years and aims to set a new standard when it comes to sustainable practices in the craft distilling industry.

“This building will hopefully be one that the local community loves, that Victorians come visit regularly and that gin lovers from around the world feel drawn to when they visit one of the greatest cities in the world, Melbourne,” says Co-founder and Distiller Cameron Mackenzie.

The 1000sqm space has triple the capacity for visitors and includes an indoor and outdoor gin garden, dubbed Jude’s Gin Garden.

In addition there are multiple event and function areas, a bar (Beth’s Bar) and a retail space for limited release gins and merch.

Additional production and capacity will allow the brand to produce more than one million bottles of gin a year and to host approximately 150-200,000 visitors annually.

A full range of table, bench, booth and bar-stool seating in Beth’s Bar and Jude’s Gin Garden allows the venue to seat 300 guests at a time.

Gin is piped directly into the main bar through copper pipes to reduce glass waste and bottled tonic usage.

The main vocal point of the distillery are five handcrafted German copper stills which will be joined by another 2000L still arriving later this year.

The ever-changing drinks offering sees tasting paddles, classic gin cocktails as well as bespoke drinks along with a substantial snack menu.

Guests can also expect food options made with local produce and gin botanicals such as duck liver pate with Bloody Shiraz gin jelly; bagels with Olive Leaf gin-cured salmon and gin-laced potato, zucchini, and dill croquettes.

The Healesville distillery will be hosting a Four Pillars Tuck Shop on weekends and public holidays with rotating food options and guest appearances.

The upgrade, the five stills, in-house bottling, storage and blending facilities make Four Pillars the largest gin distillery in the country.
