Four Pillars have teamed up with Japan’s Kyoto Distillery to create Changing Seasons, a new gin that celebrates collaboration.

It all started with a trip to Japan in spring 2019 where Four Pillars co-founders Cam Mackenzie, Matt Jones and Stu Gregor visited Kyoto Distillery’s Alex Davies who later headed over to Healesville, Victoria, to the home of Four Pillars.

Mackenzie and Davies worked with an array of Australian and Japanese botanicals before settling on what Changing Seasons is now.

“Changing Seasons Gin has big bright aromas of pine needle, green citrus and light green tea,” says Mackenzie.

“The green yuzu and the finger limes work beautifully together. The quandong and kinmokusei are really fruity to taste and the texture is driven from the hinoki, red pine and dense juniper. The juniper is big on the finish so it is unmistakably gin.”

Changing Seasons is available for $85 on Four Pillars’ website.
