The Love Tilly Group is gearing up to open a new Fabbrica location in Sydney’s Inner West next week.
The Newtown store is the fourth iteration of the pasta bar, which currently has sites up and running in the CBD and Darlinghurst, with its Balmain restaurant closing late last year.
The group snapped up the 101 King Street site in Newtown and have been busy converting into a 70-seat restaurant fitted out with table seating and a central travertine bar that overlooks the open kitchen.
“We are really looking forward to bringing Fabbrica to a new neighbourhood,” says Love Tilly Group Founder Matt Swieboda.
“There’s a bit more of an emphasis on the bar space in this venue, which is exciting for us. We want guests to be able to grab a seat at the bar for a glass of wine and a few snacks if they feel like it or settle in for a longer lunch at one of our tables.”
Group Executive Chef Scott McComas-Williams is joined by Head Chef Keir Ballantyne in the kitchen, with the pair putting together a menu of classics (zucchini flowers stuffed with ricotta plus cacio e pepe) as well as Newtown-exclusive dishes.
Staring Monday next week, the kitchen will roll out new additions of tonnarelli with vongole and bottarga; rigatoni with guanciale, peas, egg, yolk, and Pecorino; and kingfish puttanesca.
On the dessert front, the original Fabbrica panna cotta has been reworked with yuzu caramel and toasted buckwheat and there is a collaborate ‘brioche con gelato’ made with seasonal gelato from Mapo.
Guests can expect a snappy cocktail list and a generous wine offering covering organic drops and Australian-grown Italian varieties curated by Swieboda and front of house manager Jade Febvre, who joins the team after time at Paris’ Septime.
Fabbrica Newtown opens on 23 September – bookings are now open.
