Chef Alejandro Huerta is behind the latest Mexican eatery to open in Sydney’s Inner West.
The chef has worked in some of the world’s best restaurants including Noma in Copenhagen and Pujol in Mexico City, and says he is keen to offer diners something different to what they may expect from a Mexican eatery.
“I don’t like doing the same thing everyone else is doing,” he says. “I want to make sure Comedor is seen as a place where you go to have a great time and experience new flavours, and I’m looking forward to being able to really show who I am and what I’m passionate about.”
Comedor is located inside a 100-year-old former warehouse on Australia Street, which has been converted into a dining room and bar with earthy, rustic accents inspired by the works of Josef Albers.
The restaurant is open from 10 July for both lunch, snack, and dinner service, with a special $35 three-course menu available for lunch and a $79 set menu on offer for dinner alongside a la carte.
Guests can now book in and sample Huerta’s cuisine for the first time, with the chef breaking the menu up into smaller dishes, larger plates, and desserts.
Highlights include a kingfish tostada with nduja, pineapple, and spring onion; Skull Island tiger prawn on a tortilla with clam and morita sauce; and jersey cheese with salsa roja and nopales.
Share plates cover a pork chop with salsa verde, chilacayote, and purslane; Murray cod with fermented black bean sauce, honey, and radicchio; and dairy cow steak with mushroom glaze, enoki, and XO.
Venue manager Kieran Took joins Comedor from Tio’s and Big Poppa’s and is heading up the beverage offering, which is largely anchored by agave spirits including tequila, mezcal, sotol, and raicilla.
The spirits can be found across the cocktail menu, which lists familiar favourites that have been redefined with different ingredients.
The Margarita de Nuez features rose almond and cardamom, while a Mezcal Colada is made with tequila, Mal Bien, coconut, pineapple, and honeycomb.
Wine options are varied, and guests can also opt in for an agave pairing to enjoy with their dining experience.
Comedor is open from 12pm Thursday to Saturday for lunch, snacks, and dinner and Wednesday and Sunday for lunch and snacks from 12pm until 5pm.
