The Hill Bar has opened in Sydney’s Bondi, right next door to The Hill Eatery.
Located on the North Bondi hill, the bar has a Florida Key inspired design and boasts its own locally crafted Kolsch beer as well as a range of cocktails.
Open every night of the week, The Hill Bar is operated by Charmaine O’Leary and Michael Benson, the owners of The Hill Eatery, which launched in 2012.
The menu includes share plates such as cured kingfish tiradito with ruby grapefruit and jalapeno, with a focus on healthy, organic and ethically sourced produced.
The drinks list includes cocktails that celebrates rum and the flavours of Florida Keys, Bermuda and Cuba; as well as organic and biodynamic Australian wines and apple cider.
The Hill Bar offers a retro-feel with bespoke wallpaper, splashes of flamingo pink, palms and vines.
