Fortune of War has reopened today with a new 60-seat diner, Bistro 1828.
Set in the heart of The Rocks, the 200-year-old heritage-listed pub boasts Sydney’s oldest continuous license.
Family-owned WDS Hotels acquired the venue and the upstairs Russell Boutique Hotel in 2013. Now, they’ve transformed what was previously two retail spaces and the Push Bar into the bistro.
Co-Owner Steve Speed says the team worked closely to preserve the heritage fabric of the building during the extensive renovations.
“We’re still a country pub in the heart of the city, with warm and welcoming hospitality, classic pub dishes and beers poured with passion, for quality,” he says.
“We had outgrown the previous space, so by opening Bistro 1828, more people are able to enjoy the historic charm, character and sense of community that accompanies every visit to Sydney’s oldest pub.
“It has been a destination watering hole for almost 200 years, and this renovation will ensure it stays that way for the next 200.”
The bistro also features a new breakfast menu serving up a range of classics, including a big brekky (think bacon, sausages, beans, hashbrowns, etc.), eggs benedict, avo on toast, classic pancakes, and Bloody Marys.
“When we first came down to The Rocks we thought how great it would be to one day serve up bacon and eggs at Sydney’s oldest pub,” says Speed.
“Going out for breakfast is such an Australian tradition, so we’re thrilled to now offer it at this iconic location, whether you’re enjoying it as part of your hotel stay or passing by.”
An open plan kitchen sits between the original pub and the new bistro, and has significantly increased the venue’s capacity. At the kitchen’s helm is Executive Chef mark Williamson, who joins from Bistro Moncur. Williamson noted that the pub’s large and loyal customer base meant it was important they didn’t change the offering too significantly.
“All the pub classics people know and love, like our beef and Guinness stew, fish and chips, nachos, and burgers are still here, but we’ve also added some new dishes too, like fresh salads, pastas, and shared starters, with a Sunday roast coming soon,” says Williamson.
Bistro 1828 is open daily from 7am until late.
