The team from Applejack Hospitality has partnered with AccorHotels to launch a new vista bar, Hacienda, later this month.

Inspired by the grand plantation architecture of Cuba, mixed with the modern vintage hotels of 1950s Miami, Hacienda is situated in the Pullman Quay Grand Sydney Harbour.

Applejack Hospitality operates a number of other venues including Bondi Hardware, The Butler and Della Hyde. The partnership with AccorHotels saw the group redesign and transform the venue, as well as the food and beverage offering. Applejack Hospitality has also worked alongside the hotel’s food and beverage manager, Adam Leonardi, and executive chef, Stefan Brademann.

The drinks menu, just like the venue design, draws its inspiration from the lux-vintage hotels of Miami and pulls on techniques from classic Cuban drinks. The back bar is well stocked in rum and American whiskey, and the cocktail list features classic Cubanesque fruit driven drinks, incorporating banana, guava and custard apple alongside heavier liquor based concoctions.

Menu items include the Tropical Sour – banana infused Encanto Pisco, Tio Pepe, lime and honey; and the Old Smoked Presidente – aged rum, orange curacao, dry vermouth, house spiced raspberry syrup and Angostura bitters.

The food offering, including both nibbles and substantial meals, takes inspiration from Cuba’s traditional trading partners, and their local ingredients. The menu features Latin and American dishes such as Yuka fries, buttermilk fried chicken, pork neck mojo, Cuban Reuben, and a selection of burgers.
