Chef Analiese Gregory has confirmed her next chapter after announcing she was leaving Hobart restaurant Franklin last year.
Remaining in Tasmania, Gregory will undertake a one-year cultural residency at the Detached Cultural Organisation from May.
The trailblazing chef will focus on sustainable culinary practices and diners will get a chance to experience her cuisine through a series of meals at the Organisation’s headquarters, located in the former Mercury building in Hobart.
But don’t expect a traditional dining experience, Detached says the meals are for small groups of guests and are a “challenge toward cross-grained tastes”.
Foraging will form a core part of Gregory’s dishes, with the chef combing the sea and land on a daily basis. There’s also word collaborations with other chefs are on the cards along with cooking classes, workshops and discussions.
