Former Saint Peter chef Alanna Sapwell has been appointed head chef at a new venue within the Howard Smith Wharves precinct in Brisbane.
Arc will comprise a 140-seat wine bar (Arc Wine Bar) set to open on 17 December and a 100-seat restaurant (Arc Dining) which will launch in February 2019.
The chef will be working closely with local farmers and producers and focus on whole-animal use.
“We’ll be getting in carcasses, selecting the cuts that I want to use in the restaurant and then utilising what’s left to make small plates and charcuterie in-house for the wine bar,” says Sapwell.
“We’ll be using animals that have served one or two purposes already in their life like mutton and hogget and trialing dry ageing with local bees wax.”
Sapwell will be designing the food offering for the wine bar as well, which will cover charcuterie with goose rillettes sour cherry, seafood and kangaroo.
There will be more than 500 wines on offer, with head sommelier Ian Trinkle curating the drinks offering which will focus on organic and minimal-intervention wines.
