The global private members club 67 Pall Mall coming to Melbourne’s CBD in mid-2026 has revealed two key appointments.
Martin Benn and Vicki Wild have been named as managing culinary partners, adding another layer to the team previously announced. Sam Herde has been appointed as the club’s general manager, overseeing operations and membership. Meanwhile Richard Hemming MW, head of wine for Asia, is also involved in the Melbourne project.
Benn and Wild are known as the operators behind Sydney’s internationally acclaimed Sepia, which gathered a number of awards before closing in 2018. They went on to partner with Chris Lucas on Society at 80 Collins St in Melbourne, and recently collaborated with the National Gallery of Victoria and Club 1905 at the 2025 Australian Open.
67 Pall Mall Melbourne is a private members’ club primarily focused on fine wine and fine dining, set to open at 85 Spring Street in Melbourne’s CBD. This marks the club’s first foray into Australia and the southern hemisphere, following its venues in London, Singapore, and Verbier.
67 Pall Mall Founder and CEO Grant Ashton welcomed the pair. “Their reputation for precision, authenticity and warmth speaks for itself. Martin’s culinary vision, paired with Vicki’s commitment to creating thoughtful, memorable hospitality, aligns seamlessly with our values. We’re confident the Club is in exceptional hands,” said Ashton.
Benn is expected to embrace a role centred on mentorship and innovation, to foster a culture that nurtures the next generation of hospitality professionals.
“It’s always a privilege to spend time mentoring, I’ve had the pleasure of working with many great young chefs and I appreciate the opportunity to help guide the next generation,” said Benn.
Food and wine pairings remain central, allowing members to explore the club’s extensive wine list. The Melbourne club will offer arguably Australia’s broadest wine list, with 5,000 wines from over 40 countries and up to 1,000 wines available by the glass.
The club will occupy the top three to four floors of a 15-storey former bank headquarters, redesigned to provide panoramic views of the city, Treasury and Fitzroy Gardens, and the Melbourne Cricket Club.
The club will also feature multiple dining rooms, private function spaces, open-air balconies, and a striking 7-metre-tall wine wall between the 13th and 14th floors.
The 15th floor will house a Champagne, oyster, and whisky bar, with a focus on Australian oysters and a wide selection of local whiskies.
The Melbourne club is projected to open in mid-2026, with membership applications already open and starting at $2,350 per year.
